  • 1 cup (225g) unsalted butter, softened
  • 1/2 cup (60g) powdered sugar
  • 1 tsp vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup (50g) finely chopped pecans or walnuts (optional)
  • 1 tsp ground cinnamon (for the dough)
  • 1/4 cup (50g) granulated sugar (for coating)
  • 1 tsp ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream the softened butter and powdered sugar together using an electric mixer until light and fluffy. This should take about 2-3 minutes.
  3. Add the vanilla extract and mix it in.
  4. In a separate bowl, whisk together the flour, salt, and ground cinnamon. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  5. If using, fold in the finely chopped pecans or walnuts.
  6. Roll the dough into 1-inch balls and place them onto the prepared baking sheet, spacing them about 1 inch apart.
  7. Bake for 10-12 minutes or until the bottoms of the cookies are lightly golden, but the tops remain pale. Be careful not to overbake.
  8. While the cookies are baking, prepare the cinnamon-sugar coating by mixing the granulated sugar and cinnamon in a shallow bowl.
  9. Once the cookies are done, remove them from the oven and allow them to cool for 5 minutes on the baking sheet.
  10. While still warm, roll the cookies in the cinnamon-sugar mixture, coating them evenly.
  11. Allow the cookies to cool completely on a wire rack.
