Ingredients

  • 3/4 cup boiling water
  • 1/2 cup finely chopped scallions
  • 1/2 tsp salt
  • 1/4 cup vegetable oil (for frying)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar

Instructions

  1. In a mixing bowl, combine flour and salt. Gradually add boiling water while stirring until a shaggy dough forms. Cover and let rest for 30 minutes.
  2. Divide dough into four pieces and roll each into an 8-inch circle on a floured surface.
  3. Brush each circle with vegetable oil, sprinkle with scallions, and roll tightly like a burrito.
  4. Coil the rolled dough into a spiral shape and flatten gently. Roll out again to about half an inch thick.
  5. Heat oil in a skillet over medium-high heat. Fry pancakes until golden brown on both sides (about 3 minutes per side).
  6. Serve warm with a dipping sauce made from soy sauce and rice vinegar.
