- ¾ cup granulated sugar (divided)
- 16 oz cream cheese (softened)
- 1 cup sour cream (full-fat)
- 3 large eggs

Instructions
- Preheat oven to 325°F (160°C) and grease a springform pan.
- In a saucepan, melt butter over medium heat until golden brown and fragrant. Let cool slightly.
- Combine graham cracker crumbs, half of the sugar, and melted butter in a bowl. Press into the bottom of the prepared pan.
- Beat cream cheese with remaining sugar until smooth; mix in sour cream and then add eggs one at a time until just combined.
- Pour filling over crust and bake for 50-60 minutes or until edges are set but center is slightly jiggly.
- Cool gradually in the oven before refrigerating for at least 4 hours before serving.
