Ingredients

  • 1 pound large shrimp (peeled and deveined)
  • 8 ounces fettuccine pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic (minced)
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions until al dente. Drain, reserving 1 cup of pasta water.
  2. In a skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant. Add shrimp and cook until pink, about 3-4 minutes. Remove shrimp and set aside.
  3. In the same skillet, reduce heat to low. Add remaining butter and heavy cream, stirring until simmering.
  4. Whisk in Parmesan cheese until smooth. If too thick, gradually add reserved pasta water.
  5. Return shrimp to the skillet along with drained pasta; toss to coat evenly in the sauce.
  6. Serve immediately with extra Parmesan if desired.
