- 1 pound large shrimp (peeled and deveined)
- 8 ounces fettuccine pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 4 cloves garlic (minced)
- 4 tablespoons unsalted butter
- Salt and pepper to taste
Instructions
- Cook the fettuccine according to package instructions until al dente. Drain, reserving 1 cup of pasta water.
- In a skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant. Add shrimp and cook until pink, about 3-4 minutes. Remove shrimp and set aside.
- In the same skillet, reduce heat to low. Add remaining butter and heavy cream, stirring until simmering.
- Whisk in Parmesan cheese until smooth. If too thick, gradually add reserved pasta water.
- Return shrimp to the skillet along with drained pasta; toss to coat evenly in the sauce.
- Serve immediately with extra Parmesan if desired.
