Description

  • 1 3/4 cups powdered sugar (220g)
  • 3 large egg whites (90g), at room temperature
  • 1/4 cup granulated sugar (50g)
  • Food coloring (as desired)
  • 1/2 cup unsalted butter (115g), softened (for filling)
  • 1/4 cup heavy cream (60ml) (for filling)
  • Flavoring extracts (e.g., vanilla or peppermint)

Instructions

  1. Preheat oven to 300°F (150°C) and prepare baking sheets with parchment paper.
  2. In a clean bowl, whip egg whites until foamy. Gradually add granulated sugar, whisking until stiff peaks form.
  3. Sift almond flour and powdered sugar into another bowl. Gently fold into the meringue until fully combined.
  4. Transfer the mixture to a piping bag; pipe small circles on prepared sheets. Tap sheets to release air bubbles.
  5. Bake for 15-20 minutes until firm yet soft inside. Let cool completely before removing from parchment.
  6. For the filling, mix softened butter and heavy cream until smooth; flavor as desired. Pipe onto half of the shells and top with remaining halves.
