  • 1 ½ cups all-purpose flour
  • 2 tsp matcha powder (culinary grade)
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup granulated sugar
  • 1 large egg
  • ½ cup milk (dairy or plant-based)
  • ½ cup unsalted butter, melted
  • 1 tsp vanilla extract
  • ½ cup Greek yogurt or sour cream

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  2. In a medium bowl, sift together the all-purpose flour, matcha powder, baking powder, baking soda, and salt. Set aside.
  3. In a separate large bowl, whisk together the sugar, egg, milk, melted butter, and vanilla extract until smooth and well combined.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Be careful not to overmix—it’s okay if there are a few lumps.
  5. Gently fold in the Greek yogurt or sour cream until fully incorporated.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  9. Serve warm or store in an airtight container for up to 3 days. Enjoy your fluffy matcha muffins!
