- 4 boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 cup pineapple chunks (fresh or canned)
- 2 tbsp olive oil
- 1/4 cup BBQ sauce
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper to taste
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
- In a small bowl, mix the olive oil, BBQ sauce, garlic powder, onion powder, salt, and pepper. Set aside.
- Place the chicken breasts on the prepared baking sheet. Brush both sides with the BBQ sauce mixture.
- Add the sliced bell peppers, red onion, and pineapple chunks around the chicken on the baking sheet.
- Drizzle the remaining BBQ sauce mixture over the vegetables and pineapple.
- Roast in the oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
- Garnish with fresh cilantro, if desired. Serve immediately and enjoy
