Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup pineapple chunks (fresh or canned)
  • 2 tbsp olive oil
  • 1/4 cup BBQ sauce
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish (optional)

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  • In a small bowl, mix the olive oil, BBQ sauce, garlic powder, onion powder, salt, and pepper. Set aside.
  • Place the chicken breasts on the prepared baking sheet. Brush both sides with the BBQ sauce mixture.
  • Add the sliced bell peppers, red onion, and pineapple chunks around the chicken on the baking sheet.
  • Drizzle the remaining BBQ sauce mixture over the vegetables and pineapple.
  • Roast in the oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
  • Garnish with fresh cilantro, if desired. Serve immediately and enjoy
