Description

  • 4 veal shanks (about 1.5 lbs each)
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 cup dry white wine
  • 3 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients by chopping vegetables and mincing garlic.
  2. Heat olive oil in a Dutch oven over medium-high heat. Season veal shanks with salt and pepper, then sear until golden brown on all sides. Remove from pot.
  3. In the same pot, sauté onions, carrots, and celery until softened (about 5 minutes). Add garlic and cook for another minute.
  4. Deglaze the pot with white wine, scraping up browned bits. Allow it to reduce slightly.
  5. Return the veal shanks to the pot and add beef broth until shanks are two-thirds covered. Add thyme and bay leaves; bring to a gentle simmer.
  6. Cover with a lid and reduce heat to low. Cook for about 2 hours until meat is fork-tender.
