  • 2 tbsp unsalted butter
  • 1/2 cup granulated sugar
  • 4 large eggs (2 yolks, 2 whites)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Grease ramekins with butter and dust with sugar.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water or in the microwave until smooth.
  3. In another bowl, whisk egg yolks and sugar until pale. Add the melted chocolate mixture, vanilla extract, and salt; mix until combined.
  4. Whip egg whites in a clean bowl until stiff peaks form. Gently fold one-third into the chocolate mixture, then fold in the remaining whites carefully to maintain volume.
  5. Pour into prepared ramekins and bake for 12-15 minutes until puffed up. Serve immediately for best results.
