  • 2 tbsp kosher salt
  • 1 tsp black pepper
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a small bowl, combine salt, pepper, garlic, rosemary, and thyme.
  3. Pat the roast dry and rub the seasoning mixture all over it.
  4. Sear the roast in a hot skillet for 3-4 minutes on each side until browned.
  5. Transfer to a roasting pan and cook at 450°F for 20 minutes; then reduce to 325°F (163°C) until an internal temperature of 130°F (54°C) is reached for medium-rare.
  6. Let the roast rest for at least 20 minutes before slicing.
