- 2 tbsp kosher salt
- 1 tsp black pepper
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (232°C).
- In a small bowl, combine salt, pepper, garlic, rosemary, and thyme.

- Sear the roast in a hot skillet for 3-4 minutes on each side until browned.
- Transfer to a roasting pan and cook at 450°F for 20 minutes; then reduce to 325°F (163°C) until an internal temperature of 130°F (54°C) is reached for medium-rare.
