  • 4 medium waxy potatoes, peeled and thinly sliced
  • 6 large eggs
  • 1 small onion, finely chopped (optional)
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add potato slices and cook until tender, about 10 minutes.
  2. While the potatoes cook, whisk the eggs with salt and pepper in a bowl until frothy.
  3. Drain excess oil from the potatoes and mix them with the whisked eggs (add sautéed onions if using).
  4. Return the mixture to the skillet and cook until edges set, around 5 minutes. Carefully flip and cook the other side for another 5 minutes until golden brown.
  5. Allow to cool slightly before slicing into wedges. Serve warm or at room temperature.
