Instructions
- Heat olive oil in a large skillet over medium heat. Add potato slices and cook until tender, about 10 minutes.
- While the potatoes cook, whisk the eggs with salt and pepper in a bowl until frothy.
- Drain excess oil from the potatoes and mix them with the whisked eggs (add sautéed onions if using).
- Return the mixture to the skillet and cook until edges set, around 5 minutes. Carefully flip and cook the other side for another 5 minutes until golden brown.
