  • 2 medium sweet potatoes (about 1 cup mashed)
  • 1 cup oat flour
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. Boil or steam the sweet potatoes until fork-tender, about 15 minutes. Cool, peel, and mash until smooth.
  3. In a large bowl, combine mashed sweet potatoes, melted coconut oil, maple syrup, and vanilla extract.
  4. In another bowl, whisk together oat flour, baking powder, and salt. Gradually add this mixture to the wet ingredients and fold until combined; then mix in chocolate chips.
  5. Pour the batter into the prepared dish and smooth the top. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  6. Allow to cool in the pan for at least ten minutes before cutting into squares.
