  • 1/4 cup unsweetened cocoa powder
  • 2 tsp instant coffee or espresso powder
  • 1/2 tsp baking soda

  • 1/2 cup unsalted butter (room temperature)
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, coffee powder, baking soda, and salt.
  3. In a separate mixing bowl, cream the butter with granulated and brown sugars until light and fluffy. Add the egg and vanilla extract; mix until combined.
  4. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  5. Scoop rounded balls of dough onto prepared baking sheets about two inches apart.
  6. Bake for 10-12 minutes or until edges are set but centers appear slightly underbaked. Let cool on the baking sheet for five minutes before transferring to wire racks.
