  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped fresh strawberries
  • 2 tablespoons butter (for frying)
  • Optional toppings: whipped cream, chocolate syrup, or extra fresh strawberries

Instructions

  • Prepare the filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use a hand mixer or a whisk to blend until smooth and creamy.
  • Add strawberries: Gently fold in the chopped fresh strawberries into the cream cheese mixture.
  • Assemble the quesadillas: Place a tortilla on a flat surface. Spread a generous amount of the strawberry cheesecake filling over half of the tortilla, leaving the other half empty for folding.
  • Cook the quesadillas: Heat a non-stick skillet over medium heat and add a tablespoon of butter. Once melted, place the filled tortilla in the skillet, folding it in half. Cook for 2-3 minutes on each side, or until golden brown and crispy.
  • Serve and enjoy: Remove the quesadilla from the skillet and slice it into wedges. Optionally, top with whipped cream, a drizzle of chocolate syrup, or more fresh strawberries before serving.
