Ingredients

  • 1 lb (450 g) ground beef, turkey, or chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade blend)
  • 1/2 cup water
  • 1 cup black beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 810 taco-sized flour tortillas
  • 2 cups shredded cheddar cheese (or cheese of choice)
  • Cooking spray or muffin liners (for greasing the muffin tin)
  • Optional toppings:
    • Shredded lettuce
    • Diced tomatoes
    • Salsa
    • Sour cream
    • Avocado or guacamole
    • Jalapeños
    • Chopped cilantro

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Prepare a muffin tin by spraying it with cooking spray or lining it with muffin liners.
  2. Cook the Meat Mixture: In a large skillet over medium heat, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent. Add the ground meat and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  3. Add Seasoning: Stir in the taco seasoning and water. Let it simmer for about 5 minutes until the mixture thickens slightly. Add the black beans and corn, mixing until well combined. Remove from heat and set aside.
  4. Prepare Tortillas: While the meat mixture is cooling slightly, use a round cookie cutter or the rim of a glass to cut circles from the tortillas. The circles should be large enough to fit into the muffin tin, creating a “cup” shape.
  5. Assemble the Cupcakes: Place a tortilla circle in each muffin cup, pressing it down gently to form a cup. Spoon about 2 tablespoons of the meat mixture into each tortilla cup. Top with a generous amount of shredded cheese.
  6. Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly, and the edges of the tortillas are golden brown.
  7. Cool and Serve: Once baked, remove the taco cupcakes from the oven and let them cool for a few minutes. Carefully remove them from the muffin tin using a fork or small spatula.
  8. Add Toppings: Serve warm with your favorite toppings, such as shredded lettuce, diced tomatoes, salsa, sour cream, guacamole, jalapeños, or chopped cilantro.
