- 8 slices of thick-cut bread (brioche or challah recommended)
- 4 oz (113 g) cream cheese, softened
- 2 tbsp powdered sugar (or sweetener of choice)
- 1 tsp vanilla extract
- 1 cup fresh berries (such as strawberries, blueberries, or raspberries)
- 4 large eggs
- 1/2 cup milk (or plant-based milk)
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 2 tbsp butter (for frying)
- Maple syrup or honey (for drizzling)
- Optional toppings: whipped cream, powdered sugar, fresh fruit, or chocolate sauce
Instructions
- Prepare the Filling: In a medium bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth and well combined. Gently fold in the fresh berries. Set aside.
- Assemble the French Toast: Spread a generous amount of the cream cheese mixture on one slice of bread. Top with another slice of bread to create a sandwich. Repeat with the remaining slices of bread and filling.
- Make the Egg Mixture: In a shallow bowl, whisk together the eggs, milk, cinnamon, and salt until well blended.
- Cook the French Toast: Heat a large non-stick skillet or griddle over medium heat and add 1 tablespoon of butter. Once the butter is melted, dip each sandwich into the egg mixture, making sure to coat both sides. Place the dipped sandwiches in the skillet and cook for 2-3 minutes per side, or until golden brown and crispy.
- Serve: Once cooked, remove the stuffed French toast from the skillet and place on a plate. Top with your choice of maple syrup, honey, whipped cream, powdered sugar, or fresh fruit.
