Ingredients

Scale
  • For the salad:
    • 2 ripe pears (such as Bartlett or Anjou)
    • 4 cups mixed salad greens (arugula, spinach, and frisée work well)
    • ½ cup crumbled blue cheese (or feta for a milder option)
    • ½ cup walnuts or pecans (toasted for extra flavor)
    • ¼ cup dried cranberries or cherries (optional for a touch of sweetness)
    • 2 tablespoons olive oil
    • 1 tablespoon balsamic vinegar
    • Salt and pepper to taste
  • For the caramelization:
    • 2 tablespoons unsalted butter
    • 2 tablespoons brown sugar
    • 1 tablespoon lemon juice (to prevent browning of the pears)

Instructions

  • Caramelize the Pears:
    • Begin by selecting your pears. Ripe Bartlett or Anjou pears work wonderfully for this recipe. Wash the pears under cold water and dry them with a clean towel. Slice them in half and remove the core. You can choose to peel them or leave the skin on for added texture and flavor. Cut the pears into thin wedges, about 1/4 inch thick.
    • In a medium skillet, melt 2 tablespoons of unsalted butter over medium heat. Once the butter is melted and bubbling, add 2 tablespoons of brown sugar. Stir the mixture gently until the sugar is completely dissolved, forming a syrupy consistency. This will create a delicious caramel base for the pears.
    • Carefully add the sliced pears to the skillet. Toss the pears in the butter and sugar mixture, ensuring they are evenly coated. Sauté the pears for about 4-5 minutes, turning them occasionally with a spatula. You want them to become tender and develop a beautiful golden color. The caramelization process enhances their natural sweetness and adds depth of flavor.
    • To prevent the pears from browning and to add a zesty flavor, drizzle 1 tablespoon of lemon juice over the pears while they are cooking. Once the pears are caramelized and tender, remove the skillet from the heat and set the pears aside to cool slightly.
  • Prepare the Salad Base:
    • While the pears cool, prepare your salad greens. Rinse 4 cups of mixed salad greens under cold water to remove any dirt or debris. A mix of arugula, spinach, and frisée adds a delightful variety of textures and flavors. After rinsing, dry the greens thoroughly using a salad spinner or by gently patting them with a clean kitchen towel.
    • In a large mixing bowl, combine the dried salad greens. This will serve as the base for your salad.
  • Combine the Ingredients:
    • Once the caramelized pears have cooled slightly, it’s time to assemble the salad. Start by placing the warm caramelized pears on top of the bed of mixed greens. The warmth of the pears will slightly melt the cheese, creating a creamy texture.
    • Sprinkle ½ cup of crumbled blue cheese over the salad. If you prefer a milder cheese, feel free to substitute it with feta or goat cheese. The tanginess of the cheese will beautifully complement the sweetness of the pears.
    • Add ½ cup of toasted walnuts or pecans for a crunchy element. Toasting the nuts enhances their flavor, making them even more delicious. If desired, you can also include ¼ cup of dried cranberries or cherries for an extra layer of sweetness and texture.
  • Prepare the Dressing:
    • In a small bowl, whisk together 2 tablespoons of olive oil and 1 tablespoon of balsamic vinegar. Season the dressing with salt and pepper to taste. Adjust the seasoning as needed to achieve a balance between the sweetness of the salad and the acidity of the dressing.
    • Just before serving, drizzle the dressing over the assembled salad. This ensures that the greens remain crisp and fresh, while the dressing adds flavor to the entire dish.
  • Final Assembly:
    • Gently toss the salad using tongs or two large forks, ensuring that the pears, cheese, nuts, and greens are evenly mixed. Be careful not to break the caramelized pears or crumble the cheese too much.
    • Serve the salad immediately while the pears are still warm. This dish can be enjoyed as a light lunch, a side dish for dinner, or an elegant appetizer for a gathering.
