  • 1/2 teaspoon baking soda

  • 1 teaspoon ground cinnamon (for the batter)
  • 1 large egg
  • 1/2 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • Vegetable oil (for frying)

For Cinnamon Sugar Coating

  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  • Prepare the apples: Wash, peel, and core the apples. Chop them into small pieces and place them in a bowl. Add the lemon juice, 1 tablespoon of granulated sugar, and 1 teaspoon of ground cinnamon. Toss to coat the apple pieces evenly and set aside.
  • Make the batter: In a mixing bowl, whisk together 1 cup of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, and 1 teaspoon of ground cinnamon.
  • Combine wet ingredients: In a separate bowl, beat 1 large egg. Then, add 1/2 cup of milk and 1 teaspoon of vanilla extract. Mix until well combined.
  • Mix wet and dry ingredients: Pour the wet mixture into the dry ingredients. Stir gently until just combined. The batter should be thick but still slightly lumpy. Be careful not to overmix.
  • Fold in apples: Gently fold the apple mixture into the batter, ensuring the apple pieces are evenly distributed.
  • Heat the oil: In a deep skillet or pot, heat about 2 inches of vegetable oil over medium heat. To test if the oil is hot enough, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
  • Fry the fritters: Using a tablespoon or small ice cream scoop, drop spoonfuls of batter into the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown.
  • Drain the fritters: Remove the fritters from the oil with a slotted spoon and place them on a paper towel-lined plate to absorb excess oil.
