Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ¾ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ½ tsp baking powder
  • ½ cup fresh strawberries, finely chopped
  • 3 tbsp strawberry jam or preserves
  • 1 tbsp powdered sugar (for dusting)

Instructions

  1. Preheat your oven: Start by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper to prevent the cookies from sticking.
  2. Cream the butter and sugar: In a large mixing bowl, combine the softened butter and granulated sugar. Use a hand mixer or stand mixer to cream them together until the mixture is light and fluffy. This should take about 3-4 minutes. The key is to get plenty of air into the butter, which helps create a soft, tender cookie.
  3. Add the egg and vanilla: Crack the egg into the mixture and add the vanilla extract. Mix until combined, scraping down the sides of the bowl as needed to ensure everything is well incorporated.
  4. Combine the dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until the dough comes together. You may need to use a spatula to help combine everything properly.
  5. Fold in the chopped strawberries: Gently fold the finely chopped fresh strawberries into the dough. Be careful not to overwork the dough to prevent the strawberries from becoming too mushy.
  6. Shape the cookies: Scoop small amounts of dough, about 1 tablespoon each, and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Create an indentation for the jam: Use your thumb or the back of a spoon to make a small indentation in the center of each dough ball.
  8. Fill with strawberry jam: Drop a small amount (about ½ teaspoon) of strawberry jam into each indentation.
  9. Bake the cookies: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Once done, remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. Dust with powdered sugar: Once the cookies have cooled, dust them lightly with powdered sugar for a beautiful finishing touch.
