- 1 ½ cups all-purpose flour
- ¾ cup unsalted butter, softened
- ½ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract

- 3 tbsp strawberry jam or preserves
- 1 tbsp powdered sugar (for dusting)
Instructions
- Preheat your oven: Start by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper to prevent the cookies from sticking.
- Cream the butter and sugar: In a large mixing bowl, combine the softened butter and granulated sugar. Use a hand mixer or stand mixer to cream them together until the mixture is light and fluffy. This should take about 3-4 minutes. The key is to get plenty of air into the butter, which helps create a soft, tender cookie.
- Add the egg and vanilla: Crack the egg into the mixture and add the vanilla extract. Mix until combined, scraping down the sides of the bowl as needed to ensure everything is well incorporated.
- Combine the dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until the dough comes together. You may need to use a spatula to help combine everything properly.
- Fold in the chopped strawberries: Gently fold the finely chopped fresh strawberries into the dough. Be careful not to overwork the dough to prevent the strawberries from becoming too mushy.
- Shape the cookies: Scoop small amounts of dough, about 1 tablespoon each, and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Create an indentation for the jam: Use your thumb or the back of a spoon to make a small indentation in the center of each dough ball.
- Fill with strawberry jam: Drop a small amount (about ½ teaspoon) of strawberry jam into each indentation.
- Bake the cookies: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Once done, remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Dust with powdered sugar: Once the cookies have cooled, dust them lightly with powdered sugar for a beautiful finishing touch.
