Ingredients

Scale
  • 2 large eggs
  • 1 ripe avocado
  • Salt to taste
  • Pepper to taste
  • Optional toppings: red pepper flakes, fresh herbs (cilantro or parsley), lemon juice, cheese (feta or cheddar)

Instructions

  1. Cook the Eggs: Choose your preferred method—poach, scramble, or fry. For poached eggs, simmer water with a splash of vinegar, crack eggs into the water, and cook for 3-4 minutes. For scrambled eggs, whisk eggs, heat butter or oil in a pan, and cook on low heat, stirring until fluffy. For fried eggs, cook in a hot pan to your desired doneness.
  2. Prepare the Avocado: Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt, pepper, and a squeeze of lemon juice to taste.
  3. Assemble: Spread the mashed avocado on toast or a plate. Top with the cooked eggs.
  4. Garnish: Add optional toppings like red pepper flakes, fresh herbs, or cheese for extra flavor.
  5. Serve: Enjoy your delicious eggs and avocado dish as a breakfast, brunch, or light lunch
