- 2 cups fresh cranberries (chopped)
- 1 cup mini marshmallows
- 1 cup heavy whipping cream
- 8 oz cream cheese (softened)
- ½ cup granulated sugar
- 1 tsp vanilla extract
- ½ cup chopped walnuts or pecans (optional)
- 1 cup pineapple chunks (drained, optional)
- 1 cup cool whip or whipped topping
Instructions
- In a large bowl, combine the fresh cranberries and mini marshmallows. Set aside.
- In a separate bowl, beat the cream cheese and sugar together until smooth and creamy. You can use a hand mixer or stand mixer for this step.
- In a separate chilled bowl, whip the heavy cream and vanilla extract until soft peaks form.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- Add the cranberry and marshmallow mixture to the whipped cream mixture and stir until fully incorporated.
- If using, fold in the chopped walnuts or pecans and pineapple chunks.
- Transfer the salad into a serving dish or individual bowls, and refrigerate for at least 2 hours or overnight to allow the flavors to meld.
- Serve chilled, and enjoy this festive, creamy cranberry treat!
