  • 14 oz firm or extra-firm tofu
  • 1/2 cup potato starch or cornstarch
  • 1 cup vegetable oil (canola or sunflower)
  • 2 cups dashi broth
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp mirin
  • 2 green onions (chopped)

Instructions

  1. Drain the tofu and press between paper towels to remove moisture. Cut into 1-inch cubes.
  2. Coat tofu cubes evenly with potato starch.
  3. Heat vegetable oil in a skillet over medium-high heat until shimmering.
  4. Fry tofu in batches until golden brown on all sides, about 3 minutes per side. Drain on paper towels.
  5. In a separate pot, combine dashi broth, soy sauce, and mirin; bring to simmer.
  6. Serve fried tofu in bowls and pour hot broth over the top, garnishing with green onions.
