  • 2 slices of your favorite bread (sourdough or thick white bread works best)
  • 2 tablespoons unsalted butter, softened
  • 1 cup shredded cheddar cheese
  • 12 fresh jalapeños, sliced (remove seeds for a milder flavor)
  • 1 tablespoon mayonnaise (optional for added richness)
  • 1 teaspoon garlic powder (optional for extra flavor)
  • Salt and pepper, to taste

Instructions

  • Prepare the Bread: Spread a thin layer of butter on one side of each slice of bread. If you’re using mayonnaise, spread it on the other side of the bread for a richer flavor and extra crispiness.
  • Assemble the Sandwich: Place one slice of bread, buttered side down, on a clean surface. Layer a generous amount of shredded cheddar cheese on top. Add the sliced jalapeños over the cheese, adjusting the amount based on your preferred spice level. Top with the second slice of bread, buttered side facing up.
  • Grill the Sandwich: Heat a skillet or griddle over medium-low heat. Once hot, place the sandwich in the skillet. Grill for 2-3 minutes, pressing down lightly with a spatula to ensure even browning.
  • Flip and Toast the Other Side: After the first side is golden brown, flip the sandwich carefully. Grill the other side for another 2-3 minutes or until the bread is crispy and the cheese has melted.
  • Serve: Remove the sandwich from the skillet and let it rest for a minute before slicing. Serve warm and enjoy
