No-Bake Strawberry Cheesecake Lasagna Recipe

  • 1 package graham crackers (about 9–10 full sheets)
  • 1/4 cup melted butter
  • 2 cups heavy cream
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 can (14 oz) sweetened condensed milk
  • 1 1/2 cups fresh strawberries, sliced
  • 1 tablespoon granulated sugar
  • 1 tablespoon lemon juice
  • Whipped cream for topping (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  • Prepare the crust:
    Crush the graham crackers into fine crumbs using a food processor or by placing them in a plastic bag and rolling with a rolling pin. Mix the crushed graham crackers with the melted butter until well combined. Press the mixture firmly into the bottom of a 9×9-inch dish or a similar-sized baking pan. Set aside in the fridge to set for about 10-15 minutes.
  • Prepare the strawberry layer:
    In a small bowl, combine the sliced strawberries with the sugar and lemon juice. Stir gently to coat the strawberries and allow them to sit for about 10-15 minutes to release some of their juice. This will help create a sweet syrup that will soak into the layers.
  • Make the cheesecake layer:
    In a mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Add the powdered sugar and vanilla extract, and beat until well combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and creamy.
  • Assemble the lasagna:
    Spread a layer of the cheesecake mixture over the prepared graham cracker crust, smoothing it evenly with a spatula. Follow with a layer of the sugared strawberries, spooning them evenly over the cheesecake layer. Repeat these layers until all the cheesecake mixture and strawberries are used, finishing with a layer of strawberries on top.
  • Chill:
    Cover the dish with plastic wrap or foil and refrigerate for at least 4 hours, or preferably overnight, to allow the dessert to set and the flavors to meld together.
  • Serve:
    Once the lasagna is fully chilled, top with whipped cream and garnish with fresh mint leaves (optional). Slice into squares and serve chilled.
