- 2 cups sharp cheddar cheese, shredded
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard (optional)
- 1/2 cup diced pimentos, drained
- 1/2 teaspoon garlic powder

- Optional: pinch of cayenne pepper or hot sauce for heat
Instructions
- Shred the Cheese: Shred 2 cups of sharp cheddar cheese. Freshly grated cheese works best for a smooth texture.
- Combine Ingredients: In a large mixing bowl, combine the shredded cheddar cheese and 1/2 cup of diced pimentos (drained).
- Add Mayo and Mustard: Stir in 1/2 cup of mayonnaise and 1 tablespoon of Dijon mustard (optional) to the mixture. Blend until well combined.
- Season the Dip: Add 1/2 teaspoon of garlic powder, salt, and pepper to taste. For extra heat, add a pinch of cayenne pepper or a few dashes of hot sauce, if desired.
- Chill (Optional): Cover the dip and refrigerate for at least an hour to allow the flavors to meld together. This step is optional but recommended for the best flavor.
- Serve: Once chilled, serve with crackers, vegetable sticks, chips, or as a spread on sandwiches. Enjoy
