Quick and Easy Tuna Pasta Recipe

Ingredients

  • Pasta: 200g of your choice (penne, spaghetti, fusilli, or any preferred type)
  • Tuna: 2 cans (approximately 140g each) of tuna in olive oil or brine, drained
  • Olive Oil: 2 tablespoons
  • Garlic: 2 cloves, minced
  • Onion: 1 small, finely chopped
  • Tomatoes: 2 medium, diced, or 1 can (400g) of chopped tomatoes
  • Tomato Paste: 1 tablespoon
  • Herbs: 1 teaspoon each of dried oregano and basil
  • Seasoning: Salt and pepper to taste
  • Optional Additions: Red pepper flakes for a spicy kick, black olives, capers, or a squeeze of lemon juice
  • Garnish: Fresh parsley, chopped, and grated Parmesan cheese

Instructions

  • Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta, reserving a little pasta water for later.
  • Prepare the sauce: While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes soft and translucent (about 3-4 minutes).
  • Add the tomatoes: Stir in the diced fresh tomatoes (or canned tomatoes) and tomato paste. Let the mixture simmer for 5-7 minutes until the tomatoes break down and the sauce thickens slightly.
  • Add the tuna: Stir in the drained tuna, breaking it up into smaller pieces with a spoon. Add the oregano, basil, salt, and pepper. Let everything cook together for another 3-4 minutes, allowing the flavors to combine.
  • Combine with pasta: Add the drained pasta to the skillet with the sauce. Toss everything together, adding a little reserved pasta water if the sauce seems too thick. Continue to toss until the pasta is evenly coated.
  • Serve: Divide the tuna pasta between plates. Garnish with fresh parsley and a generous sprinkle of Parmesan cheese. Optionally, drizzle with a little olive oil or squeeze some fresh lemon juice on top for extra flavor.
