- 3 medium bell peppers (any color)
- 2 medium zucchinis
- 1 cup short-grain rice
- 1 lb ground beef or lamb (or 1 cup cooked lentils for vegetarian option)
- 1 medium onion, finely chopped
- ¼ cup fresh dill, chopped
- ¼ cup fresh parsley, chopped
- 3 tbsp extra virgin olive oil
- 1 cup tomato sauce
Instructions
- Preheat oven to 375°F (190°C) and spray a baking dish with nonstick spray.
- Cut the tops off the bell peppers and zucchinis; remove seeds for stuffing.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes). Add ground meat (or lentils), cooking until browned. Mix in rice, herbs, salt, and pepper until combined.
- Generously stuff each vegetable with the filling and arrange them upright in the baking dish.
- Pour tomato sauce over stuffed vegetables and cover with aluminum foil.
- Bake for approximately 45 minutes or until vegetables are tender.
