  • 3 medium bell peppers (any color)
  • 2 medium zucchinis
  • 1 cup short-grain rice
  • 1 lb ground beef or lamb (or 1 cup cooked lentils for vegetarian option)
  • 1 medium onion, finely chopped
  • ¼ cup fresh dill, chopped
  • ¼ cup fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 1 cup tomato sauce

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick spray.
  2. Cut the tops off the bell peppers and zucchinis; remove seeds for stuffing.
  3. In a skillet, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes). Add ground meat (or lentils), cooking until browned. Mix in rice, herbs, salt, and pepper until combined.
  4. Generously stuff each vegetable with the filling and arrange them upright in the baking dish.
  5. Pour tomato sauce over stuffed vegetables and cover with aluminum foil.
  6. Bake for approximately 45 minutes or until vegetables are tender.
