Ingredients
  

Potatoes
  • 2 pounds potatoes Yukon Gold or red potatoes work well.
Dressing
  • 1 cup mayonnaise
  • 2 tablespoons mustard Dijon or yellow.
  • 1 tablespoon vinegar Apple cider or white.
  • 1 teaspoon salt
  • 1 teaspoon pepper
Toppings
  • 1 cup celery Chopped.
  • 1 cup green onions Chopped.
  • 1 cup bacon Cooked and crumbled.

Method
 

Preparation
  1. Boil the potatoes in a pot until tender, about 15-20 minutes.
  2. Drain and let cool, then chop into bite-sized pieces.
  3. In a bowl, mix together the mayonnaise, mustard, vinegar, salt, and pepper.
  4. Add the chopped potatoes, celery, green onions, and bacon to the bowl and mix well.
Serving
  1. Chill in the refrigerator for at least 30 minutes before serving.
  2. Serve cold and enjoy!
