  • 2 cups fennel, thinly sliced
  • 1/2 cup pistachios, chopped
  • 1 cup oven-dried grapes
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • salt to taste

Method
 

Prepare the Oven-Dried Grapes
  1. Preheat the oven to 200°F (93°C). Spread grapes on a baking sheet and bake for 2-3 hours until dried.
Assemble the Salad
  1. In a mixing bowl, combine sliced fennel, chopped pistachios, and oven-dried grapes.
  2. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss to combine.
