Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1 cup butter softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 pinch salt
Filling
  • 1 cup peach preserves
  • 1 teaspoon cinnamon

Method
 

Prepare the Dough
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. Combine the flour, baking powder, and salt; gradually add to the creamed mixture.
Form and Bake Cookies
  1. Roll the dough into small balls and place them on a baking sheet.
  2. Make a small indentation in the center of each ball and fill with peach preserves mixed with cinnamon.
  3. Bake for 15 minutes or until lightly golden.
