A classic French dessert made with layers of almond sponge cake, coffee buttercream, and chocolate ganache.

Ingredients
  

Cake Layers
  • 4 large eggs
  • 100 g sugar
  • 100 g almond flour
  • 30 g all-purpose flour
  • 30 g butter melted
Coffee Buttercream
  • 200 g unsalted butter softened
  • 250 g powdered sugar
  • 2 tbsp instant coffee dissolved in water
Chocolate Ganache
  • 200 g dark chocolate chopped
  • 100 ml heavy cream

Method
 

Prepare Cake Layers
  1. Preheat the oven to 180°C (350°F). Grease and line a baking pan.
  2. In a mixing bowl, whisk eggs and sugar until pale and fluffy.
  3. Fold in almond flour and all-purpose flour, then add melted butter.
  4. Pour the batter into the prepared pan and bake for 20-25 minutes.
  5. Let the cake cool completely before removing from the pan.
Make Coffee Buttercream
  1. In a bowl, beat the softened butter until creamy.
  2. Gradually add powdered sugar and dissolved coffee, mixing until smooth.
Prepare Chocolate Ganache
  1. Heat the heavy cream until just boiling, then pour over the chopped chocolate.
  2. Let sit for a few minutes, then stir until smooth.
Assemble the Cake
  1. Cut the cooled cake into layers.
  2. Spread a layer of coffee buttercream between each cake layer.
  3. Top with chocolate ganache and let set before serving.

Notes

Opera cake is best served chilled and can be stored in the refrigerator for up to 3 days.
