Ingredients
  

Salad Base
  • 1 cup Puy lentils rinsed
  • 1 cup Pearl barley rinsed
  • 2 medium Oranges peeled and segmented
  • 4 large Eggs hard-boiled
Dressing
  • 3 tablespoons Olive oil
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Honey
  • 1 pinch Salt
  • 1 pinch Pepper

Method
 

Prepare the Ingredients
  1. Cook the Puy lentils and pearl barley in separate pots according to package instructions until tender.
  2. Drain and rinse the lentils and barley, then let cool.
  3. Hard boil the eggs, peel, and chop them.
  4. Segment the oranges and set aside.
Make the Dressing
  1. In a mixing bowl, whisk together olive oil, red wine vinegar, honey, salt, and pepper.
Assemble the Salad
  1. In a large bowl, combine the lentils, barley, orange segments, and chopped eggs.
  2. Drizzle with the dressing and toss gently to combine.
